300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

200ml citrus syrup (as made above)

Instructions
Making the Citrus Syrup: Combine the listed items inside a saucepan, heat until it reaches a light boil, agitating so the sugar melts. Then, take off the stove and leave to cool completely. Transfer to a sterilised bottle, seal and refrigerate it chilled, it will last for about a month.
Preparing the Cocktail Base: Pour the specified spirits and syrup into a big jug, allow it to infuse for an hour, then filter it preferably using muslin, making it completely strained.
When ready to serve: Add 85ml from the batch mix to a stirring glass packed with ice, and stir carefully for a minute to chill. Filter to a cold coupe glass or equivalent, top with a few cranberries and finish using a light spray of the essential oil over the top.
